  • Prepare the stock. 
  • Add the stock, couscous, raisins and BBQ spice rub to a large bowl and well the for 8 minutes, covered.
  • Add the white wine vinegar and season to taste with salt and pepper.
  • Stir through the couscous with a fork. Finely chop the onion and add to the couscous to soak. 

Health tip: This recipe is high in calories. If you're watching your calorie intake, use just half of the Greek-style cheese and keep the rest to use another time.

  • Meanwhile, thoroughly wash the sweet potato and then dice into 1cm cubes. 
  • Place the diced sweet potato in a large microwave-safe bowl. Add a knob of butter and 1 tbsp of water per person to the bowl, then cover with plastic wrap and poke a few holes in the wrap.
  • Microwave on high for 4 - 5 minutes, or until the sweet potato is soft.
  • Carefully remove the plastic wrap, then season with salt and pepper, stir to combine and set aside.

  • In small bowl mix, the mayonnaise, water for sauce, curry powder and sweet chilli sauce.
  • Roughly chop the almonds.

  • Transfer the lettuce to deep bowls. Add the couscous.
  • Top with the bell pepper strips, sweet potato, crumble over the Greek-style cheese and garnish with the almonds. 
  • Drizzle the curry-chili mayonnaise on top.
