- Boil plenty of water in a pot or saucepan and crumble in a stock cube.
- Cook the pasta for 9 - 11 minutes.
- Reserve 40 ml pasta water per person, then drain and set aside.
- Meanwhile, quarter the fennel and remove the tough core, then chop into strips.
- Slice the courgette into crescents.
- Mince the garlic.
- Cut the lemon in 6 wedges. Finely chop the fresh herbs.
- Heat a drizzle of olive oil in a deep frying pan on medium-high heat and fry the courgette and fennel for 4 minutes.
- Add the garlic and kerrie spices to the vegetables and fry for another 1 - 2 minutes.
- Add the cooking cream and the reserved pasta water and stir well. Let the sauce simmer until the pasta is done cooking.
- Add the pasta and half of the fresh herbs to the sauce and mix well. Squeeze the juice of 1 lemon part per person and season with salt and pepper if necessary.
- Divide the pasta between bowls.
- Top with the salmon and the rest of the fresh herbs.
- Serve with the remaining lemon wedges.
