Instructies

  • Boil plenty of water in a pot or saucepan and crumble in a stock cube.
  • Cook the pasta for 10 - 12 minutes.
  • Reserve 40 ml pasta water per person, then drain and set aside.

  • Meanwhile, quarter the fennel and remove the tough core, then chop into strips. 
  • Slice the courgette into crescents.
  • Mince the garlic.
  • Cut the lemon in 6 wedges. Finely chop the fresh herbs.

  • Heat a drizzle of olive oil in a deep frying pan on medium-high heat and fry the courgette and fennel for 4 minutes.
  • Add the garlic and kerrie spices to the vegetables and fry for another 1 - 2 minutes.
  • Add the cooking cream and the reserved pasta water and stir well. Let the sauce simmer until the pasta is done cooking.
  • Add the pasta and half of the fresh herbs to the sauce and mix well. Squeeze the juice of 1 lemon part per person and season with salt and pepper if necessary.

  • Divide the pasta between bowls.
  • Top with the salmon and the rest of the fresh herbs.
  • Serve with the remaining lemon wedges.
