Cooking Steps

Prepare

  • Preheat the oven to 180°C.
  • Peel or thoroughly wash the potatoes and then cut them into rough pieces.
  • Transfer to a pot or saucepan and submerge with water, then crumble in the stock cube (see pantry for amount). Boil the potatoes for 12 - 15 minutes, then drain and set aside.
  • Meanwhile, finely shred the cabbage. Slice the onion into half rings and crush or mince the garlic. Core and dice the apple.
Fry the vegetables

  • Heat the olive oil in a deep frying pan over medium-high heat. Fry the mince for 2 minutes, separating it as you do so.
  • Add the onion, the garlic and the cabbage and fry for 3 more minutes.
  • Add the apple and the curry powder, along with half each of the mustard and the cream. Mix well to combine, then season to taste with salt and pepper.
Assemble

  • Mash the potatoes with the butter and the rest of the cream and mustard. Season to taste with salt and pepper.
  • Transfer the mince mixture to an oven dish.
  • Top with the mashed potatoes and then scatter over the cheese.
  • Bake in the oven for 15 minutes.
Serve

  • Meanwhile, finely chop the chives or use scissors if preferred.
  • Serve on plates and garnish with the chives.
