Instructies

  • Peel and dice the mango.
  • Halve and pit the avocado, then remove the skin and slice the flesh.
  • Grate the purple carrot with a box grater.
  • Finally, chop the coriander and mint.

  • Pat the shrimp dry with kitchen paper.
  • Heat a drizzle of olive oil in a wok or deep frying pan over medium-high heat.
  • Add the shrimp and chipotle paste and fry for 2 - 3 minutes until done.
  • Turn off the heat and stir in a knob of butter.

  • Drain the corn and transfer to a small bowl.
  • Mix the corn with the zhoug. Cut the lime into wedges.
  • In another small bowl, mix the mayonnaise with 1 lime wedge of juice per person.
  • Heat the tortillas in the microwave for 1 - 2 minutes at 700 watts.

  • Divide the tortillas among the plates.
  • Fill each tortilla with the purple carrot, mango and avocado.
  • Top with the corn and zhoug, chipotle shrimp and lime mayonnaise.
  • Drizzle the leftover chipotle butter from the pan over it and crumble the greek-style cheese on top.
  • Garnish with the fresh herbs.
