  • Boil plenty of water in a pot or saucepan. Weigh the brown rice and then boil for 10 minutes or until done. Drain and set aside.
  • Finely chop the onion, crush or mince the garlic.
  • Wash and dice the potatoes in cubes of no thicker than 1 cm. 
  • Bruise or pierce the lemongrass in three places. Cut half of the lime into wedges and juice the rest into a small bowl.

  • Heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat, and fry the onion, potatoes and half of the garlic for 1 - 2 minutes. 
  • Add the garam masala*, ground turmeric, tomato paste, half of the ginger paste and fry for one more minute.
  • Add the water, crumble in the stock cube and add the lemongrass. Bring to a boil, and then simmer over low heat for 2 - 3 minutes.
  • Transfer the pork tenderloin tips to the pan and boil for 3 - 6 minutes or until the pork tenderloin is done. Season to taste with salt and pepper.

*Take care, this ingredient is spicy! Use as preferred.

  • Meanwhile, use a sharp knife to remove the skin and the white pith from the orange and then cut the flesh into segments.Tear the coriander into small pieces.
  • In a salad bowl, combine a drizzle of sunflower oil, mango chutney, lime juice and the rest of the ginger and garlic.
  • Transfer the coriander, slaw mix, and orange to the salad bowl and mix everything together. Season to taste with salt and pepper.

  • Remove the lemongrass from the curry.
  • Serve the rice on deep plates and serve the curry on top.
  • Serve with the salad, lime wedges and garnish with the peanuts.
