Cooking Steps

Fry the vegetables
1
  • Heat the sunflower oil in a wok or deep frying pan over medium-high heat. Fry the chicken mince with the vegetable mix for 5 - 6 minutes. Stir occasionally, separating the mince as you do so.
  • Meanwhile, crush or mince the garlic.
  • Finely chop the scallions, separating the white part from the greens.
Make the curry
2
  • Cut the lime into six wedges and roughly chop the peanuts.
  • To the wok, add the garlic, the white part of the scallions, the harissa*, the curry powder, the coconut milk, the ketjap and the honey.
  • Squeeze one lime wedge per person directly into the wok, then toss well to combine.
  • Increase the heat to high and bring to a rapid boil.

*Take care, this ingredient is spicy! Use as preferred.

Cook the noodles
3
  • Add the noodles and cook for 1 minute, separating them as you do so.
  • Season to taste with salt and pepper.

Serve
4
  • Serve the noodles and curry in bowls.
  • Garnish with the peanuts and the scallion greens.
  • Serve the rest of the lime wedges alongside.
