- Heat the sunflower oil in a wok or deep frying pan over medium-high heat. Fry the chicken mince with the vegetable mix for 5 - 6 minutes. Stir occasionally, separating the mince as you do so.
- Meanwhile, crush or mince the garlic.
- Finely chop the scallions, separating the white part from the greens.
- Cut the lime into six wedges and roughly chop the peanuts.
- To the wok, add the garlic, the white part of the scallions, the harissa*, the curry powder, the coconut milk, the ketjap and the honey.
- Squeeze one lime wedge per person directly into the wok, then toss well to combine.
- Increase the heat to high and bring to a rapid boil.
*Take care, this ingredient is spicy! Use as preferred.
- Add the noodles and cook for 1 minute, separating them as you do so.
- Season to taste with salt and pepper.
