Cooking Steps

Prepare

  • Boil plenty of water in a pot or saucepan for the green beans and noodles.
  • Discard the tough ends of the green beans and cut into thirds.
  • Chop the scallions into rings and separate the white part from the greens.
  • Crush or mince the garlic.
Cook the noodles

  • Boil the green beans for 3 - 4 minutes, then add the noodles and boil for another 3 - 4 minutes.
  • Add the beansprouts during the final minute.
  • Drain and rinse briefly, then set aside.

Fry the meatballs

  • Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat.
  • Fry the garlic with the white part of the scallions for 1 minute, then add the meatballs and fry for 3 - 4 minutes until evenly browned.
  • Stir in the ketjap and East Asian-style sauce and fry for 2 - 3 minutes, then add the gomashio.
Serve

  • Serve the noodles and green beans on deep plates.
  • Top with the meatballs in their sauce.
  • Garnish with the scallion greens.
