- Boil plenty of water in a pot or saucepan for the green beans and noodles.
- Discard the tough ends of the green beans and cut into thirds.
- Chop the scallions into rings and separate the white part from the greens.
- Crush or mince the garlic.
- Boil the green beans for 3 - 4 minutes, then add the noodles and boil for another 3 - 4 minutes.
- Add the beansprouts during the final minute.
- Drain and rinse briefly, then set aside.

- Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat.
- Fry the garlic with the white part of the scallions for 1 minute, then add the meatballs and fry for 3 - 4 minutes until evenly browned.
- Stir in the ketjap and East Asian-style sauce and fry for 2 - 3 minutes, then add the gomashio.
- Serve the noodles and green beans on deep plates.
- Top with the meatballs in their sauce.
- Garnish with the scallion greens.
