- Preheat the oven to 220°C and prepare the stock.
- Chop the onion and crush or mince the garlic.
- Dice the bell pepper and the tomato.
- Heat a drizzle of olive oil in a large deep frying pan over medium-high heat. Fry the onion and the garlic for 1 - 2 minutes, or until fragrant.
- Add the bell pepper, the tomato, the tomato paste and the chorizo. Mix well and fry for 4 - 5 minutes.
- Meanwhile, drain the beans.
- Deglaze the pan with the balsamic vinegar and the stock.
- Stir in the beans and the Hello Buon Appetito, then bring to a boil. Reduce the heat and allow to simmer for 4 - 5 minutes.
- Gradually add the spinach to the stew, tearing it directly into the pan. Season to taste with salt and pepper.
- Meanwhile, thinly slice the bread roll and transfer to one side of a parchment-lined baking sheet.
- Drizzle with olive oil and scatter over the garlic-herb seasoning.
- Transfer the stew to an oven dish and scatter over the cheese.
- Place the oven dish on the other side of the baking sheet, alongside the bread.
- Bake everything in the oven for 4 - 5 minutes.
- Serve the stew on deep plates with the garlic bread alongside.
