Cooking Steps

Prepare

  • Boil plenty of salted water in a pot or saucepan for the spaghetti.
  • Chop the onion and crush or mince the garlic.
  • Dice the courgette and grate the carrot.
  • Cut the bacon into strips and prepare the stock.
Boil the spaghetti

  • Heat a generous drizzle of olive oil in a deep frying pan over medium-high heat. Fry the onion and the garlic for 1 minute.
  • Add the carrot, the courgette and the tomato paste, then fry for another minute.
  • Stir in the mince and the bacon, then fry for 3 more minutes, separating the mince as you do so.
  • Boil the spaghetti for 10 - 12 minutes until al dente, then drain and set aside.
Make the sauce

  • Add the passata and oregano, then pour in the stock.
  • Turn the heat to low and allow to simmer for 8 - 10 minutes, covered (see Tip).
  • Season to taste with salt and pepper.

Tip: if preferred, simmer the sauce for more time so as to further develop the flavours. Add a splash of water as necessary if it seems too thick.

Serve

  • Mix 0.5 tbsp sauce per person into the spaghetti, so as to stop it from sticking together.
  • Serve the spaghetti on plates and top with the rest of the sauce.
  • Garnish with the cheese to finish.
