Cooking Steps

Haal de roomboter uit de koelkast zodat deze op temperatuur kan komen. Breng ruim water aan de kook in een pan met deksel. Was of schil de aardappelen en snijd in grove stukken. Voeg de aardappelen toe en kook, afgedekt, in 12 - 15 minuten gaar. Giet af en laat uitstomen zonder deksel. Breng op smaak met peper en zout.

Knoflook-kruidenboter maken

Pers de knoflook of snijd fijn. Snijd de krulpeterselie en de bieslook fijn. Meng de knoflook en verse kruiden met de roomboter en breng op smaak met peper en zout. Het is niet erg als de roomboter nog niet zacht is: je mengt deze later met de warme broccoli.

Breng ruim water met een snuf zout aan de kook in een pan met deksel voor de broccoli. Snijd de bloem van de broccoli in roosjes en de steel in blokjes. Kook de broccoli, afgedekt, in 4 - 6 minuten gaar. Giet af en schep meteen de kruidenboter erdoor, zodat die kan smelten.

Tip: Wist je dat broccoli rijk is aan ijzer en kalium? Dit gerecht bevat wel 250 g broccoli en bevat daardoor meer vitamine C dan de dagelijks aanbevolen hoeveelheid.

Varkensfilet met ham bakken

Omwikkel de varkensfilet met de ham. Verhit de olijfolie in een grote koekenpan op middelhoog vuur en bak de filet 1 - 3 minuten per kant. Haal uit de pan en bewaar onder aluminiumfolie tot serveren.

Jus maken

Schenk een scheutje water en 1/2 el mosterd per persoon bij het achtergebleven bakvet in de koekenpan en verhit. Roer glad tot er een egale jus ontstaat. Breng op smaak met peper en zout.

Serveren

Verdeel de gekookte aardappelen over de borden en schenk de jus erover. Leg de varkensfilet met ham ernaast en serveer met de broccoli in kruidenboter. Garneer met de zure room.
