- Boil plenty of water in a saucepan. Carefully transfer the eggs to the water and boil for 5 - 7 minutes.
- Drain and rinse the eggs under cold water, then set aside.
- Discard the base of the pak choi and finely chop both the leaves and the stems, being sure to keep them separate.
- Slice the portobello.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat. Fry the portobello with the stems of the pak choi for 2 - 3 minutes.
- Add a knob of butter and the green part of the pak choi, then fry another 4 - 6 minutes.
- In the meantime, grate the carrot.
- Prepare the stock in a large pot or saucepan for the soup.
- Bring the stock to a boil, then add the Hello Umami, the teriyaki sauce and the udon noodles.
- Boil the noodles for 1 minute, then turn off the heat.
- Add a splash of milk, the miso paste* and the ketjap.
- Mix well to combine, then taste and add some soy sauce as preferred.
*Take care, this ingredient is salty! Use as preferred.
- Peel the eggs and cut them in half.
- Serve the noodle soup on deep plates, topped with the pak choi, the portobello, the carrot and the eggs.
- Drizzle with some soy sauce and/or chili oil* as preferred.
- Garnish with the furikake to finish.
