Cooking Steps

Schil de aardperen en de aardappelen en snijd in even grote, grove stukken. Zorg dat de aardperen ruim onder water staan in een pan met deksel, verkruimel het bouillonblokje erboven en breng afgedekt aan de kook en laat 15 - 20 minuten zachtjes koken. Voeg na 5 minuten de aardappelen toe en kook mee. Giet daarna af, bewaar een beetje kookvocht en laat zonder deksel uitstomen.

Tip: Wist je dat 100 g aardpeer, zoals gebruikt in dit gerecht, meer ijzer bevat dan 100 g biefstuk? Andere ijzerrijke producten zijn spinazie, andijvie, tahin (sesampasta), tofu, ei, cashewnoten en haring

Pers of snijd de knoflook fijn. Snijd de zongedroogde tomaten in kleine stukjes. Snijd de halloumi in plakken van 1/2 cm dik en snijd de spinazie klein.

Tip: Dit gerecht bevat veel calorieën. Let jij op je calorie-inname? Gebruik dan 75 g halloumi per persoon en vervang de roomboter in de puree door een extra scheutje melk of kookvocht van... zie fun facts

Verhit 1/2 el van de roomboter per persoon in een wok of hapjespan met deksel op middelhoog vuur en fruit 2/3 van de knoflook met 1 1/2 tl gedroogde tijm per persoon 1 minuut. Voeg de spinazie toe en bak nog 3 - 4 minuten. Voeg de stukjes zongedroogde tomaten toe, bak nog 1 minuut en breng op smaak met peper en zout. Houd afgedekt warm.

Verhit ondertussen een 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de rest van de knoflook met de halloumi 2 - 3 minuten per kant (zie TIP).

Tip: Zorg ervoor dat de halloumi tegelijkertijd met de stamppot klaar is. Halloumi smaakt namelijk net nadat het gebakken is het lekkerste. Als je halloumi te lang laat staan, wordt hij taai.

Stamp de aardappelen en aardpeer tot een grove puree. Voeg 1 el roomboter per persoon en een scheutje kookvocht toe om het smeuïg te maken. Roer de mosterd door de puree en breng op smaak met peper en zout. Proef en breng eventueel verder op smaak. Voeg de gebakken spinazie toe en meng goed door de puree (zie TIP).

Tip: Zit er nog wat olie bij de zongedroogde tomaten? Meng deze dan door de puree!

Verdeel het gerecht over de borden en serveer met de halloumi.
