- Boil plenty of water in a pot or saucepan and cook the pasta for 11 - 13 minutes, then drain and set aside.
- Meanwhile, prepare the stock.
- Slice half of the courgette into crescents and then roughly chop the rest.
- Mince half of the onion and roughly chop the rest. Crush or mince the garlic.
- Heat a light drizzle of olive oil in a saucepan over medium-high heat.
- Fry the garlic with the roughly chopped courgette and onion for 3 - 4 minutes.
- Stir in the cream and half of the Italian seasoning, then pour in the stock.
- Cover with the lid and allow to simmer over low heat for 8 - 10 minutes, or until the courgette is soft.
- Use an immersion blender to process into a smooth sauce, then season to taste with salt and pepper.
- Heat a light drizzle of olive oil in a deep frying pan over medium-high heat. Fry the mince for 3 minutes, separating it as you do so.
- Add the tomatoes, along with the rest of the courgette, the onion and the Italian seasoning.
- Mix well and fry for 7 - 9 minutes.
- Finely grate the Parmigiano Reggiano.
- Transfer the sauce and the pasta to the deep frying pan, then mix well to combine, adding a splash of water if necessary.
- Serve the pasta on plates and drizzle with the basil crème.
- Garnish with the Parmigiano Reggiano to finish.
