Cooking Steps

Prepare

  • Boil plenty of water in a pot or saucepan.
  • Cook the rice for 10 - 12 minutes or until done, then drain and set aside, covered. 
  • Heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat and fry the chicken for 7 minutes.
Juice the orange

  • Slice the onion into half-rings and crush or mince the garlic.
  • Transfer the onion to the chicken, along with the vegetable mix.
  • Mix well to combine and fry for 6 - 8 more minutes.
  • Juice the orange in the meantime (see Tip).

Tip: if preferred, you can also zest the orange so as to add more flavour to the stir-fry.

  • Add the garlic, the orange juice, the East Asian-style sauce and the hoisin sauce to the stir-fry.
  • Mix well to combine and cook for 5 more minutes, or until the sauce has thickened and reduced. Season to taste with salt and pepper.
  • Meanwhile, roughly chop or tear the Thai basil.
Serve

  • Serve the rice on deep plates and top with the stir-fry.
  • Garnish with the hazelnuts and the sesame seeds.
  • Scatter over the Thai basil to finish.
