Cooking Steps

  • Boil plenty of salted water in a pot or saucepan and cook the spaghetti for 10 - 12 minutes. Reserve some of the cooking liquid, then drain and set aside.
  • Meanwhile, cut the courgette into thin crescents.
  • Heat a light drizzle of olive oil in a large deep frying pan over medium-high heat and fry the meatballs with the courgette for 4 - 5 minutes. Season with salt and pepper.

  • In the meantime, slice the onion.
  • Crush or mince the garlic. 
  • Halve the meatballs with a spatula, add the garlic, onion and Italian seasoning, then cover with a lid and fry for a further 3 minutes.

  • Quarter the lemon. Roughly chop the fresh herbs.
  • Add the cooking cream, honey, the juice of 1 lemon wedge per person, and half of each the fresh herbs and Grana Padano to the vegetables and simmer on medium heat. Season well with salt and pepper.
  • When the spaghetti is done, add it to the sauce along with half of the spinach and add a splash of pasta water if preferred. Stir until the spinach is wilted.

  • Divide the rest of the spinach over the plates and top with the spaghetti and chicken meatballs.
  • Garnish with the rest of the fresh herbs and Grana Padano, and serve with the rest of the lemon wedges.
