Instructies

  • Preheat the oven to 220°C.
  • Dice the courgette and crush or mince the garlic.
  • Boil plenty of water for the tortelloni in a pot or saucepan.

  • Heat a drizzle of olive oil in a large deep frying pan over medium-high heat.
  • Fry the courgette and garlic for 3 - 4 minutes.
  • Deglaze with half of the balsamic vinegar and stir in the cooking cream, sugar, Sicilian-style herb mix, the water and crumble in the stock cube.
  • Cover with the lid and allow to simmer for 3 minutes.

  • Carefully separate the tortelloni and boil for 2 minutes.
  • Reduce the heat of the sauce and gradually add the spinach, tearing it directly into the pan. Heat for another minute.Season to taste with salt and pepper.
  • When the tortellini is done, drain and add it to the sauce and mix everything, then transfer to the oven dish.
  • Scatter over the cheese, then bake in the oven for 8 minutes.

  • Cut the tomato in quarters and transfer to a bowl. Combine with the rest of the balsamic vinegar and extra virgin olive oil. Season to taste with salt and pepper.
  • Serve the tortelloni on plates.
  • Serve the salad along the side and drizzle the crema di balsamico over the tortelloni.
