- Boil plenty of water in a pot or saucepan.
- Crumble in the stock cube and then boil the rice for 10 minutes until done.
- Drain and set aside. Season with salt and pepper.
- Melt the butter in a frying pan over high heat and fry the meatballs for 3 - 4 minutes until evenly browned.
- Lower the heat to medium-high, add the veggie mix and cover with a lid, then fry for 5 - 7 minutes.
- Take the lid off and fry for another 3 - 4 minutes, or until the meatballs and vegetables are done. Season well with salt and pepper.
- In a bowl, mix the ketchup, soy sauce, honey and water for sauce.
- Add to the vegetables and mix well.
- Serve the rice and fried vegetables with meatballs on plates and garnish with cirspy fried onions.
