Instructies

  • Prepare the stock. Roughly chop the onion. 
  • Heat the butter in a soup pot or large pot.  Add the onion and fry for 2 - 3 minutes over medium-high heat. 
  • Meanwhile, cut the carrot and courgette into 2cm chunks. Crush or mince the garlic.
  • Add the courgette, carrots, garlic and the potato seasoning mix. Fry for 2 - 3 minutes.

  • Wash or peel the potatoes and cut them into small cubes.
  • Transfer 1/4 of the potatoes to a pot or saucepan and submerge them with water. Cover and boil the potato cubes for 9 - 10 minutes. Drain and set aside.
  • Finely chop the fresh herbs.
  • Add the rest of the potatoes to the soup pot and pour in the chicken broth. Stir in half of the basil and oregano. Bring the soup to a boil, then reduce the heat and let it simmer for 10-15 minutes.

  • Toast the sunflower seeds in a frying pan until they start to turn lightly golden brown. Remove and set aside. 
  • In the same frying pan, heat the olive oil over medium-high heat. Add the pulled chicken and fry it for 1- 2 minutes. 
  • Cut half of the lemon into wedges and juice the rest into a small bowl. Blend the soup with an immersion blender until it reaches a smooth texture.
  • Stir in the lemon juice and season to taste with salt and pepper.

  • Serve the soup in deep plates or bowls.
  • Top with the pulled chicken and the rest of the potato.
  • Garnish with the rest of the fresh herbs and sunflower seeds.
  • Serve with the lemon wedges.
