Instructies

  • Crush or mince the garlic.
  • Finely dice the onion.
  • Heat a drizzle of olive oil in a wok or deep frying pan over medium heat and fry the onion, garlic and orzo for 2 minutes. Add plenty of water and the stock cube and cover with the lid. Allow to cook for 10 - 12 minutes over low heat, stirring regularly.

  • Cut the head of the broccoli into small florets and dice the stem.
  • Boil the broccoli with the orzo for the last 5 - 7 minutes (add some more water if necessary). Drain and add back to the pan.
  • Meanwhile, heat a drizzle of olive oil in a frying pan over medium-high heat. When the pan is nice and hot, fry the schnitzel for 3 - 4 minutes per side or until golden-brown.

  • Chop the parsley and quarter the lemon.
  • When the orzo and broccoli are done, lower the heat and stir in the cream and Italian seasoning.
  • Squeeze in the juice of 1 lemon wedge per person and add half of the parsley. Season to taste with salt and pepper.

  • Serve the saucy orzo and broccoli on deep plates with the veggie cheese schnitzel.
  • Garnish with the rest of the parsley and serve with the rest of the lemon wedges.
