- Preheat the oven to 200°C. Transfer the fries to a parchment-lined baking sheet and bake in the oven for 20 - 25 minutes or until golden-brown, tossing halfway.
- Chop the bell pepper into strips.
- Chop the onion into half rings.
- Heat a light drizzle of olive oil in a deep frying pan. Fry the onion and bell pepper 3 - 4 minutes.
- Add the chicken mince, the BBQ spice rub and the ground paprika to the veggies and fry for 3 - 4 minutes.
- In the meantime, chop the chives finely and mix with the lemon mayonnaise with black pepper.
- Drain the black beans.
- Add the black beans to the frying pan and stir-fry for 1 minute over high heat. Season with salt and pepper to taste.
- Season the fries with salt and divide the fries over deep plates.
- Serve the black bean chicken mixture on top.
- Crumble over the Greek-style cheese.
- Drizzle the herb mayonnaise on top.
