Instructies

  • Preheat the oven to 210°C. Slice the courgette into 0.5cm thin crescents and the bell pepper into thin strips.
  • Transfer the vegetables to a parchment-lined baking sheet. Drizzle olive oil on top and season with salt and pepper.
  • Roast in the oven for 15 - 20 minutes or until done. 
  • Boil plenty of salted water in a pot or saucepan and cook the pasta for 16 - 18 minutes, then drain and set aside.

Did you know...courgettes are technically classified as a fruit, as are cucumbers, pumpkins and tomatoes. Courgettes are high in iron, vitamin C and calcium.

  • In the meantime, crush or mince the garlic. Dice the tomato. 
  • Heat a drizzle of olive oil in a saucepan over medium-high heat, and fry the meatballs for 3 - 4 minutes until evenly browned.
  • Half the meatballs with a spatula. Lower the heat and cover with the lid, then fry for a further 3 minutes.
  • At the last minute, add the garlic and tomato and fry along with the meatballs

  • Deglaze with the balsamic vinegar and add the Sicilian-herb spice mix, sugar and the passata.
  • Cover with a lid and let simmer for 2 - 3 minutes.
  • Add the pasta to the sauce and mix well to combine.

  • Serve the pasta with sauce on plates.
  • Place the vegetables and mozzarella separately in bowls. Use toppings according to your taste.
  • Drizzle the basil creme on the parents plates.
