- Boil plenty of salted water in a pot or saucepan, and cook the spaghetti for 10 - 12 minutes. Drain, but save some of the pasta water and set aside.
- Dice the eggplant.
- Heat a drizzle of olive oil in a deep frying pan with a lid and fry the eggplant for 3 - 5 minutes.
- In the meantime, dice romano pepper, onion and tomato.
- Add a second drizzle of olive oil to the pan with the eggplant. Add the tomato paste, tomato, onion, and romano pepper, and stir fry for 2 minutes over medium-high heat.
- Add the BBQ spice mix, Sicilian herb mix, and a splash of water. Cover with a lid and let it cook for 7 - 9 minutes.
- Heat a clean small frying pan over high heat. Toast the pistachio nuts until golden-brown, then remove from the pan and set aside.
- Heat a light drizzle of olive oil in the same frying pan. Fry the capers 3 - 4 minutes. Turn off the heat and let it sit in the pan until serving.
- In the meantime, roughly chop the kalamata olives.
- Finely chop the basil.
- Remove the lid from the deep frying pan. Stir in the honey (see pantry for amounts and more to taste) and add the spaghetti and a splash of pasta water. Simmer for 2 - 3 minutes over low heat. Bring to taste with salt and pepper.
- Divide the pasta over deep plates.
- Garnish the pasta with the olives, fried capers, pistachio and basil.
