- Preheat the oven to 220°C.
- Chop the onion and crush or mince the garlic.
- Slice the carrot into thin crescents and dice the tomato.
- Discard the rosemary stalk and finely chop the leaves.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the garlic, onion and carrot for 3 minutes.
- Add the tomato paste, tomato and rosemary and fry for 2 more minutes.
- Add the mince and cover with the lid. Allow to cook for 10 minutes over medium heat, stirring regularly. Season with salt and pepper to taste.
- Transfer the vegetables and mince to an oven dish and sprinkle with the cheese. Top with the puff pastry.
- Use the tip of a knife to score the top of the puff pastry in a criss-cross pattern.
- Bake the pie for 15 - 20 minutes or until the pastry is golden-brown and done.
- Serve the pie on deep plates.
- Top with the cranberry chutney.
