- Prepare the stock in a pot or saucepan. Boil the giant couscous in the stock for 12 - 14 minutes over low heat. Drain if necessary and add back to the pot.
- Mix the couscous with the potato seasoning and extra virgin olive oil to taste.
- Dice the Cypriot-style cheese into cubes of no more than 2cm.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the chopped onion with the cheese cubes for 3 - 4 minutes until evenly golden brown.
- Then drizzle with 1 tsp honey per person and sprinkle the harissa*. Season with salt and pepper to taste.
*Take care, this ingredient is spicy! Use as preferred.
- Meanwhile, cut the cucumber into crescents and add to a bowl. Add the white wine vinegar and sugar. Season with a pinch of salt and mix well to combine.
- Roughly chop the fresh herbs.
- Dice the tomato.

- Serve the salad in bowls and top with the giant couscous, tomato, cucumber, Cypriotic-style cheese and onion.
- Drizzle with the honey-mustard sauce.
- Garnish with the fresh herbs and chopped cashews.
