- Prepare the stock. Finely dice the shallot, crush or mince the garlic and roughly chop the spinach.
- Heat a drizzle of olive oil in a wok or deep frying pan over low heat and fry half of the shallot (see Tip) and garlic for 2 minutes.
- Stir in the spinach, orzo and fry over medium heat for 1 minute, then pour in stock over the orzo and cover with the lid.
- Allow to cook for 10 - 12 minutes over low heat, stirring regularly. Add some more water if necessary.
Tip: If you don't like raw shallot in a dressing, fry all of it with the garlic.
- Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the chicken thigh strips with the Greek-style spices for 7 minutes.
- Meanwhile, discard the lemon thyme stalks.
- Cut the top off of the red chili pepper, then roll it in your hands so as to release the seeds. Allow the seeds to fall out as preferred, then thinly dice.
- Zest the lemon. Cut half of the lemon into wedges and juice the rest into a small bowl.
- Add the lemon thyme, chili pepper*, mayonnaise, white wine vinegar, lemon juice, and the rest of the shallot to make a dressing. Season to taste with salt and pepper.
- Dice the tomato and roughly chop the dill.
- When the orzo is done stir in the lemon zest, dill and season to taste with salt and pepper.
*Take care, this ingredient is spicy! Use as preferred.
- Serve the orzo in bowls and top with the chicken.
- Finish with the tomato and crumble over the Greek-style cheese.
- Drizzle over the lemon thyme dressing.
- Serve with the lemon wedges along the side.
