- Prepare the stock. Boil plenty of water in a pot or saucepan for the noodles.
- Chop the onion and crush or mince the garlic.
- Dice the courgette and the bell pepper.
- Heat a drizzle of sunflower oil in a soup pot over high heat and fry the onion with the garlic and yellow curry spices for 1 minute.
- Stir in the courgette and bell pepper and fry for 4 minutes.
- Meanwhile, heat the rest of the sunflower oil in a frying pan over medium-high heat, halve the meatballs and fry for 5 - 8 minutes.
- Add the coconut milk and the stock, to the vegetables, then allow to simmer gently over medium heat.
- Meanwhile, cook the noodles for 4 - 5 minutes
- Add the noodles, the soy sauce and sambal to taste to the curry and cook for 1 - 2 more minutes. Season with salt and pepper as preferred.
- Serve the noodle soup in bowls and top with the meatballs.
- Garnish with the sesame seeds.
