Instructies

  • Boil plenty of salted water in a pot or saucepan and cook the pasta for 7 - 9 minutes. 
  • Reserve some pasta water, then drain.
  • Meanwhile, chop the bell pepper into thin strips.
  • Crush or mince the garlic.

  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat. Fry the bell pepper, along with garlic and pre-cut onion for 2 minutes. 
  • In the meantime, cut the courgette into quarters lengthways and then slice. Finely chop the tarragon.
  • Add the courgette and tarragon to the pan and fry for 3 - 4 minutes. Season with salt and pepper.
  • Add the flour, crumble in the stock cube, and mix well.

  • Add the heavy cream and some pasta water as preferred to the vegetables.
  • Mix well and let simmer until serving. Season with salt and pepper.
  • Meanwhile, melt a knob of butter in a frying pan over high heat and pat the shrimp dry with kitchen paper. Fry the shrimp with the curry spices for 1 - 2 minutes.
  • Add the honey to the shrimp, mix well and turn off the heat.

  • Cut the lemon into 6 parts and add the juice of 1 lemon wedge per person to the sauce.
  • Serve the pasta on deep plates and top with the sauce and the shrimp.
  • Drizzle over the curry shrimp butter.
  • Serve with the rest of the lemon wedges.
