Caesar salad is een klassieke salade die vooral in de Verenigde Staten al decennialang populair is. De salade is vernoemd naar de Italiaanse immigrant Caesar Cardini en werd volgens de overlevering geboren uit nood: meer ingrediënten waren er door een feestdag niet voorhanden. Vandaag maak je een vegetarische variant zonder ansjovis.

Voorbereiden

• Breng ruim water aan de kook in een pan met deksel voor de sperziebonen. • Verwijder de steelaanzet van de sperziebonen en was de eieren grondig. Snijd de witte ciabatta in blokjes van 1 cm • Voeg de sperziebonen, de eieren en een flinke snuf zout toe aan de pan met deksel en kook de sperziebonen en eieren, afgedekt, 8 – 10 minuten.

• Verhit de olijfolie in een grote koekenpan op middelhoog vuur en roerbak de blokjes ciabatta in 6 – 7 minuten bruin. Breng op smaak met peper en zout. • Haal de bladeren van de mini-romaine uit elkaar. • Pers het sap uit citroen.

Dressing mengen

• Meng in een saladekom de mayonaise met het grootste deel van de grana padano, de kappertjes, 1/2 el citroensap en 1/2 el water per persoon, peper en zout. • Meng de romainesla door de dressing. • Giet de sperziebonen af en spoel de eieren onder koud water.

Serveren

• Pel de eieren en snijd in tweeën. • Verdeel de salade over de borden, leg de sperziebonen ertussen en de eieren erop. • Bestrooi met de croutons en de overige grana padano.
