- Take the steak out of the fridge and allow it to reach room temperature.
- Boil plenty of water in a pot or saucepan. Slice the cucumber into crescents.
- In a bowl, combine the white wine vinegar with half of the sugar. Add the cucumber, then toss well to combine.
- Slice the onion into half-rings and crush or mince the garlic. Grate the carrot.
- Boil the noodles for 4 - 5 minutes, then drain.
- Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the onion with the carrot for 3 minutes.
- Stir in the garlic, the East Asian-style sauce, the ginger paste, the soy sauce and the rest of the sugar. Fry for 1 more minute.
- Add the noodles and toss well to combine.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat.
- When the pan is nice and hot, fry the steak for 1 - 3 minutes per side (see Tip).
- Remove from the pan and season with pepper, then allow to rest under aluminum foil.
Tip: fry the steak for more or less time as preferred, depending on how rare you'd like it.
- Roughly chop the fresh herbs and cut the lime into wedges.
- Squeeze one lime wedge per person into the noodles, then serve on plates.
- Top with the steak and the cucumber.
- Garnish with the fresh herbs and serve the rest of the lime wedges alongside.
