- Prepare the stock.
- Chop the onion and crush or mince the garlic.
- Dice the Romano pepper.
- Heat a drizzle of olive oil in a large deep frying pan over medium-high heat. Fry the onion with the garlic for 1 minute.
- Add the mince and fry for 3 - 4 minutes, separating it as you do so.
- Stir in the Romano pepper, the Italian seasoning and the Sicilian-style herbs and fry for 3 - 4 minutes. Season to taste with salt and pepper.
- Add the orzo and fry for 1 more minute.
- Add the tomatoes and the stock, then bring to a boil.
- Cover with the lid and allow to cook for 12 - 15 minutes until the orzotto is done. Stir occasionally so as to prevent it from sticking and add a splash of water as necessary if it seems too dry.
- When the orzotto is done, gradually add the spinach. Allow to wilt and reduce.
- Meanwhile, crumble the cheese.
- Serve the orzotto on plates.
- Garnish with the cheese to finish.
