Cooking Steps

Prepare

  • Trim the ends off the green beans and cut them in half.
  • Roughly chop the almonds and press or mince the garlic. 
  • Heat a clean large frying pan over medium-high heat. Toast the almonds for 2 - 3 minutes until golden brown, then remove from the pan and set aside.
Fry the green beans

  • Heat a drizzle of olive oil in the same pan and fry the green beans for 2 - 3 minutes over medium-high heat.
  • Add the water (see pantry for amount) to the green beans, cover with a lid and cook for 7 - 8 minutes over medium-high heat.
  • Add the garlic to the green beans in the last minute, then remove from the pan and transfer to a plate to cool down.
Prepare the salad

  • Dice the apple and halve the cherry tomatoes. 
  • Drain the tuna.
  • Transfer the apple, cherry tomatoes, arugula, lamb's lettuce and tuna to the salad bowl along with the pumpkin seed oil. Season the salad with salt and pepper to taste and mix well.
Prepare the croutons

  • Cut the ciabatta into cubes.
  • Heat a drizzle of olive oil in the same pan as the green beans over medium-high heat and fry the bread for 5 minutes until crispy.
  • Add the capers and fry for another 2 - 3 minutes.
  • Remove from the pan and set aside with the almonds.
Make the dressing

  • Finely chop the fresh herbs. Keep some of aside for garnish.
  • In a small bowl, mix the yogurt with the rest of the fresh herbs, the Worcestershire sauce, the mayonnaise (see pantry for amount) and season with salt and pepper to taste. Stir well.
Serve

  • Serve the salad onto deep plates with the green beans.
  • Drizzle over the yogurt herb dressing. 
  • Garnish with the croutons, almonds, capers and the remaining fresh herbs.
