Cooking Steps

Voorbereiden

  • Breng ruim water met een flinke snuf zout aan de kook in een pan met deksel voor de verse pappardelle.
  • Snijd de prei in dunne ringen en snipper de ui.
  • Pers de knoflook of snijd fijn.
Saus maken

  • Verhit 1/2 el olijfolie per persoon in een hapjespan met deksel op middelhoog vuur.
  • Bak de knoflook, ui en prei 4 - 5 minuten op hoog vuur. Blijf goed roeren.
  • Kook de pappardelle 4 - 6 minuten in de pan met deksel. Giet af en laat zonder deksel uitstomen.
  • Voeg de slagroom toe aan de prei en verbrokkel 1/4 bouillonblokje per persoon boven de pan (zie Tip). Dek af en laat 5 - 7 minuten op laag vuur stoven. Voeg de laatste 2 minuten de spinazie toe en dek opnieuw af.

Tip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Vervang dan de helft van de slagroom door een gelijke hoeveelheid melk of bouillon. De overige room is lekker in bijvoorbeeld soep.

  • Verhit ondertussen 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur en bak de kabeljauw 1 - 2 minuten per kant. Breng op smaak met peper en zout. 
  • Roer de helft van de kaas door de roomsaus en verhit nog 2 - 3 minuten verder.
  • Snijd de citroen in partjes en knijp 1/4 citroen per persoon uit boven de saus. Breng flink op smaak met peper en zout.

  • Snijd de verse kruiden fijn.
  • Verdeel de pasta over de borden en schep de prei-spinaziesaus erover.
  • Leg de vis op de saus.
  • Garneer met de bieslook en dille en de overige kaas en citroenpartjes.
