Zoetzuur maken

  • Breng ruim water aan de kook in een pan met deksel. Kook de basmatirijst, afgedekt, in 12 - 15 minuten gaar. Giet af en laat zonder deksel uitstomen.
  • Meng in een saladekom per persoon: 2 el wittewijnazijn met 1 tl suiker.
  • Snijd de radijs en gele biet in dunne plakken en meng door het zoetzuur. Breng op smaak met peper en zout.
  • Zet apart tot serveren en schep af en toe om.


Snijden

  • Pers de knoflook of snijd fijn. Rasp de gember fijn.
  • Snijd de bosui in dunne ringen. Bewaar het groene en het witte deel apart van elkaar.
  • Dep de varkenshaaspuntjes droog met keukenpapier.
  • Meng in een kom de gesneden paddenstoelen met de varkenshaaspuntjes en de bloem.
Préparer les champignons laqués

  • Verhit de zonnebloemolie op middelhoog vuur in een wok of hapjespan met goede anti-aanbaklaag.
  • Voeg de paddenstoelen en de varkenshaaspuntjes toe en bak 5 minuten.
  • Voeg de knoflook, gember en het witte deel van de bosui toe en bak nog 2 minuten.
  • Voeg 1 el bruine suiker per persoon toe en schep om totdat de suiker gesmolten is.
  • Blus af met de sojasaus, 2 el water per persoon en de helft van de sesamolie.
  • Roer regelmatig door tot er niks meer aan de bodem kleeft en de saus is indikt.


Serveren

  • Meng de rijst met de andere helft van de sesamolie en de helft van het gomasio. Breng op smaak met peper en zout.
  • Verdeel de rijst over diepe borden en schep de paddenstoelen en varkenshaaspuntjes erop.
  • Garneer met de andere helft van het gomasio en het groene deel van de bosui.
  • Serveer met de zoetzure radijs en gele biet.
