Cooking Steps

Prepare
1
  • Preheat the oven to 220°C.
  • Wash or peel the potatoes and cut into 1cm cubes (see Tip).
  • Transfer the potatoes to a parchment-lined baking sheet, along with the unpeeled garlic clove.
  • Drizzle with olive oil and season with salt and pepper, then toss well to coat.

Health Tip: if you're watching your calorie intake, skip the potatoes and keep them to use another time.

Make the slaw
2
  • Roast the potatoes for 10 minutes, then remove the garlic clove.
  • Toss the potatoes and then return to the oven for 5 - 10 minutes, or until done.
  • Slice the cucumber into thin crescents and transfer to a bowl.
  • Add the slaw mix, the white wine vinegar, the mustard and the honey, then toss well to combine. Season to taste with salt and pepper.
Fry the burger
3
  • Melt a generous knob of butter in a frying pan over medium-high heat and fry the burger for 3 minutes per side.
  • Squeeze the roasted garlic clove out of its skin into a small bowl, then mash with a fork.
  • Add the mayonnaise and mix well to combine, seasoning to taste with salt and pepper.
Serve
4
  • Cut open the bread roll and spread with some of the garlic mayonnaise.
  • Top with the burger and some of the cucumber slaw.
  • Serve the rest of the cucumber slaw alongside.
  • Serve the potatoes with the rest of the garlic mayonnaise.
