De smaak van venkel gaat goed samen met de pesto die je in dit gerecht gebruikt. Dit komt doordat de pesto, naast pecorino en pijnboompitten, basilicum bevat. Dit past qua smaak uitstekend bij venkel. De basilicum is Genovese basilicum, een soort die alleen in de streken rondom het Italiaanse Genoa wordt geteeld.

Cooking Steps

Snijd de venkel.

Kook 500 ml water per persoon in een pan met deksel voor de fusilli. Snijd de venkel in kwarten, verwijder de harde kern en snijd klein. Halveer de cherrytomaten.

Kook de fusilli, afgedekt, 10 - 12 minuten en giet daarna af. Laat zonder deksel uitstomen.

Verhit een wok of hapjespan op hoog vuur en rooster de zonnebloempitten, zonder olie, goudbruin. Haal uit de pan en bewaar apart.

Verhit vervolgens de olijfolie in de wok of hapjespan en bak de venkel 5 - 7 minuten op middelmatig vuur.

Voeg de helft van de grana padano toe.

Voeg de cherrytomaten toe en bak 2 minuten mee. Voeg de pesto en de helft van de grana padano toe, breng verder op smaak met peper en zout en verhit nog 1 minuut.

Voeg de fusilli toe.

Voeg vervolgens de fusilli toe en roer goed door.

Bestrooi met zonnebloempitten.

Verdeel de fusilli over de borden. Besprenkel met extra vierge olijfolie naar smaak en bestrooi het gerecht met de overige grana padano en zonnebloempitten.
