  • Preheat the oven to 200°C. 
  • Transfer the bread to a parchment-lined baking sheet and bake for 5 - 6 minutes. 
Boil the eggs

  • Boil plenty of water in a saucepan. Carefully transfer the eggs to the water and boil for 5 - 7 minutes.
  • Rinse the eggs under cold water, then remove the shell and cut the eggs in half.
  • Cut the avocado in half and remove the pit. 
  • Slice the avocado into thin strips and season with salt and pepper.

  • Cut the bread in half, then spread the herbed cream cheese on the bottom halves.
  • Layer with avocado slices and add the smoked salmon, then close the sandwich.
  • Top with the eggs and season with salt and pepper to taste.
