Abrikoos is een veelgebruikt ingrediënt in de Midden-Oosterse keuken en combineert goed met munt. Naast munt gebruik je ook koriander en bladpeterselie. Van het rundergehakt maak je köfte. Het Perzische woord küfta betekent letterlijk vleesbal en het wordt veelal gegeten in Turkije, rondom de Balkan en in Noord-Afrika.

Cooking Steps

Bereid de bouillon en verwarm de oven voor op 150 graden. Meng de couscous met de bouillon in een saladekom en laat afgedekt wellen.

Snijd de aubergine

Kneed het rundergehakt en draai 4 köfteballetjes per persoon. Druk de balletjes plat. Snijd de aubergine in de lengte in plakken van maximaal een ½ cm. Verhit 1/3 van de olijfolie in een grill- of koekenpan met deksel en bak de aubergine, eventueel in delen, 2 minuten aan elke kant op hoog vuur. Bestrooi met peper en zout. Haal daarna uit de pan en houd warm in de oven.

Verhit 1/3 olijfolie in de grill- of koekenpan en bak de köfte 3 minuten rondom op middelhoog vuur. Zet het vuur lager, dek de pan af en bak 5 - 6 minuten. Breng op smaak met peper en zout. Haal daarna uit de pan en houd warm onder aluminiumfolie.

Snijd de groenten klein

Hak ondertussen de koriander, krulpeterselie en munt fijn. Snijd de cherrytomaten doormidden. Pers het sap van de citroen uit. Verwijder de pit van de abrikoos en snijd in dunne plakken.

Maak de couscous los met een vork. Voeg de cherrytomaten en het grootste deel van de verse kruiden toe.

Verhit de overige olijfolie in de grill- of koekenpan en bak de abrikoos 1 minuut aan elke kant op hoog vuur.

Breng ondertussen de couscous op smaak met de extra vierge olijfolie, 1 el citroensap per persoon, peper en zout. Voeg daarna het grootste deel van de abrikoos toe.

Verdeel de couscoussalade over de borden. Serveer de gehaktballetjes bij de couscous en garneer met de overige abrikoos en verse kruiden. Besprenkel naar smaak met extra citroensap en extra vierge olijfolie en serveer met de aubergine.
