Kook 500 ml water per persoon voor de glasnoedels in een pan met deksel.

Schil de gember en snijd fijn. Snijd de rode peper doormidden, verwijder de zaadlijsten en snijd fijn. Maak de champignons schoon met keukenpapier en snijd in plakken. Snijd de rode paprika doormidden, verwijder de zaadlijsten en snijd klein. Verwijder de onderste cm van de lenteui en snijd in ringen. Was de limoen, rasp de schil met een fijne rasp en pers het sap uit. Spoel de koriander af en hak fijn.

Wel de glasnoedels, afgedekt, 3 - 5 minuten in de pan met deksel. Giet daarna af, spoel af onder koud water en meng met de helft van de zonnebloemolie.

Verhit ondertussen de overige zonnebloemolie in een wok of hapjespan en bak de gember, rode peper, varkenshaasreepjes en currykruiden 3 minuten. Voeg de rode paprika toe en bak 3 minuten. Voeg de champignons, lenteui, sojasaus, honing en 1 el limoensap per persoon toe en bak 5 minuten. Breng op smaak met peper en zout. Voeg de glasnoedels toe en verhit nog 1 minuut.

Verdeel het gerecht over de borden, garneer met de verse koriander en besprenkel naar smaak met limoensap.
