Cooking Steps

Rijst koken
1

Breng ruim water aan de kook in een pan met deksel. Voeg de risottorijst toe en verkruimel ¼ bouillonblokje per persoon boven de pan. Breng opnieuw aan de kook en kook, afgedekt, in 12 – 15 minuten gaar. Giet daarna af indien nodig en laat zonder deksel uitstomen.

Salade mengen

Snijd de komkommer in blokjes. Rasp de wortel met een grove rasp. Voeg de komkommer, wortel en salademix toe aan een saladekom. Voeg naar smaak peper en zout toe. Verhit ondertussen een koekenpan zonder olie op middelhoog vuur en rooster het sesamzaad goudbruin. Haal uit de pan en bewaar apart.

Vis voorbereiden

Dep de kabeljauwfilet droog met keukenpapier. Voeg de bloem toe aan een diep bord en haal de vis erdoorheen. Zet de koekenpan van het sesamzaad terug op middelhoog vuur en verhit 1/2 el olijfolie per persoon.

Vis bakken

Bak de kabeljauwfilet 3 – 5 minuten op de huid. Verlaag het vuur en bak nog 1 - 2 minuten op de andere kant. Voeg vervolgens per persoon: 1 el sojasaus en 1 tl honing toe en verwarm het geheel nog 1 - 2 minuten.

Sesamdressing maken

Meng in een kleine kom de mayonaise, het sesamzaad en per persoon: 1/2 el water, 1/2 el wittewijnazijn of rijstazijn, 1/2 el suiker, 1 tl sojasaus en 1 tl sesamolie. Voeg naar smaak peper toe.

Serveren

Verdeel de rijst over de borden. Leg de salade eromheen en leg de kabeljauwfilet bovenop de rijst. Verdeel de zeewiersalade en de furikake kruiden over de zalmfilet. Garneer het geheel met de sesamdressing.
