Cooking Steps

Cherrytomaten bereiden

Verwarm de oven voor op 200 graden. Pers de knoflook of snijd fijn. Leg de cherrytomaten met knoflook en 1/4 el olijfolie per persoon in een ovenschaal en zet de 15 - 20 minuten in de oven. Schep vervolgens om met de zwarte balsamicoazijn, peper en zout en laat even intrekken. Het is niet erg als de tomaatjes afkoelen.

Breng 2 pannen met ruim water aan de kook, 1 voor de sperziebonen en 1 voor de aardappelen. Snipper de sjalot zeer fijn. Verwijder de harde uiteinden van de sperziebonen. Was en halveer de aardappelen en voeg toe aan één van de pannen. Kook, afgedekt, 12 - 15 minuten. Kook de sperziebonen, afgedekt, 6 - 8 minuten. Giet beide af en spoel de sperziebonen met koud water zodat ze niet verder garen.

Dressing maken

Maak in een kleine kom een dressing van mosterd, wittewijnazijn, de fijn gesnipperde sjalot en extra vierge olijfolie. Breng op smaak met peper en zout. Snijd de citroen in parten.

Kip bereiden

Verhit de roomboter in een hapjespan met deksel op middelmatig vuur. Leg de gekonfijte kippendijen in de pan, dek af en laat 5 - 10 warm worden. Haal de kip vervolgens uit de pan en voeg de aardappelen hieraan toe. Roer door het bakvet en breng op smaak met peper en zout.

Salade afmaken

Halveer ondertussen de leccino olijven. Meng in een saladekom de sperziebonen, olijven en de gemengde sla met de dressing. Roer vlak voor serveren de cherrytomaten door de salade.

Verdeel de aardappelen over de borden en knijp naar smaak een partje citroen over de aardappelen uit. Schep de mayonaise ernaast. Serveer de salade bij de aardappelen en leg de gekonfijte kippendij erop.
