Kneed de mix goed.

Snipper de sjalot flinterdun. Meng in een kom de boekoeloekoemix met de sjalot, oude kaas, ei, melk, peper en zout. Kneed de boekoeloekoemix goed en laat 15 minuten afgedekt in de koelkast opstijven.

Bak de aardappelen.

Schil of was ondertussen de aardappelen (mozart) grondig en snijd in blokjes van 1 cm. Verhit de helft van de olijfolie in een wok of hapjespan met deksel op middelmatig vuur en bak de aardappelen, afgedekt, 25 – 30 minuten. Breng op smaak met peper en zout.

Breng 300 ml water per persoon aan de kook in een pan met deksel voor de sperziebonen. Verwijder de uiteinden van de sperziebonen en kook de sperziebonen in 6 - 8 minuten beetgaar.

Maak ondertussen van de boekoeloekoemix 2 burgers per persoon.

Bak de burgers.

Verhit de overige olijfolie in een koekenpan op middelmatig vuur en bak de burgers 5 minuten aan elke kant.

Verdeel het gerecht over de borden.

Verdeel de burgers, gebakken aardappelen en sperziebonen over de borden.
