De krokussen en narcissen staan alweer een tijdje in bloei – het is volop lente! Hoog tijd dus voor een fris lente-recept. Er gaat niets boven zelfgemaakte soep en vandaag maak je een groene versie met courgette, prei en dille gegarneerd met yoghurt. De perfecte afsluiting van een mooie lentedag.

Snijden en bakken

• Bereid de bouillon en verwarm de oven op 200 graden. • Pers de knoflook of snijd fijn. Snijd de courgette in blokjes en de prei in ringen. Hak de dille grof. • Verhit de olijfolie in een soeppan met deksel op middelhoog vuur. Voeg de knoflook, prei en courgette toe en bak 6 – 8 minuten.

Spekjes bakken

• Voeg de bouillon toe aan de soeppan, verlaag het vuur en laat de soep 5 – 6 minuten, afgedekt, zachtjes koken. • Verhit ondertussen een koekenpan op middelhoog vuur en bak de spekblokjes 8 – 10 minuten, of tot ze knapperig zijn.

Soep pureren

• Bak de broodjes 3 – 4 minuten in de voorverwarmde oven. • Pureer ondertussen de soep glad met een staafmixer. Voeg eventueel meer bouillon of water toe als je de soep te dik vindt. • Roer de groene pesto door de soep.

Serveren

• Verdeel de soep over de borden. • Garneer met de yoghurt, spekblokjes en dille. Serveer met het broodje.
