Voorbereiden

Snipper de ui. Pers de knoflook of snijd fijn. 

Groenten bakken

Verhit 1/2 el olijfolie in een soeppan of grote pan met deksel. Fruit de ui en knoflook 1 - 2 minuten. Voeg de Italiaanse groentemix toe en bak 3 - 4 minuten mee. 

Kip pocheren

Weeg de parelgerst af. Voeg per persoon: 1/2 bouillonblokje en 350 ml water toe aan de soeppan en breng aan de kook (zie Tip 1). Voeg het laurierblad, de parelgerst en de kipfilet toe. Laat, afgedekt, 8 - 10 minuten zachtjes koken. Je pocheert nu de kip in de soep (zie Tip 2). Controleer of de kipfilet gaar is en haal hem uit de soep. Kook de kipfilet langer indien nodig. 

Tip 1: Let jij op je zoutinname? Gebruik dan de helft van de aangegeven hoeveelheid van het bouillonblokje.

Tip 2: Pocheren is het garen van een ingredient in vocht. Hiervoor heb je geen vet nodig. Door de kip in de soep te pocheren wordt hij gelijkmatig gaar én trekken de smaken van de kip ook in de soep.

Voeg de Italiaanse kruiden en spinazie toe aan de soep en laat nog 10 - 15 minuten koken met het deksel op de pan. Breng op smaak met peper en eventueel zout. 

Weetje: Spinazie bevat veel voedingsstoffen, waaronder ijzer. IJzer is essentieel voor het vervoeren van zuurstof in ons lichaam, wat bijdraagt aan een energiek gevoel.

Kip plukken

Pluk ondertussen met de hand de kipfilet klein of gebruik 2 vorken om de kipfilet uit elkaar te trekken. Breng op smaak met peper en zout.

Serveren

Haal het laurierblad uit de soep. Verdeel de soep in een diep bord en garneer met de geplukte kipfilet, de basilicumcrème en de kaas.
