Cooking Steps

Risotto maken

Verwarm de oven voor op 200 graden en bereid de bouillon. Snipper de sjalot. Pers de knoflook of snijd fijn. Verhit 1/2 el roomboter per persoon in een hapjespan op laag vuur en bak de risottorijst, de helft van de knoflook en de helft van de sjalot 1 minuut. Voeg 1/3 van de bouillon toe en laat de rijst de bouillon opnemen. Roer regelmatig door. Voeg, zodra de bouillon is opgenomen, weer 1/3 van de bouillon toe en herhaal dit met de overige bouillon.

Vlees bakken

Verhit een koekenpan zonder olie op middelhoog vuur en rooster het amandelschaafsel goudbruin. Haal uit de pan en bewaar apart. Wikkel ondertussen het ontbijtspek om de varkenshaas. Verhit 1/2 el roomboter per persoon in dezelfde koekenpan op middelhoog vuur en bak de varkenshaas in 3 - 4 minuten rondom bruin. Bewaar de pan met bakvet voor de champignonsaus. Leg de varkenshaas in een ovenschaal en bak 6 - 8 minuten in de oven. Haal uit de oven, dek af met aluminiumfolie en laat rusten tot gebruik.

Saus maken

Snijd de champignons in plakjes. Verhit de koekenpan met het bakvet van de varkenshaas op middelmatig vuur en bak de champignons 6 - 8 minuten. Voeg de bospaddenstoelenpesto toe en bak nog 2 minuten. Voeg de kookroom toe, verlaag het vuur en laat 6 - 8 minuten inkoken.

Groenten bakken

Verhit de overige roomboter in een hapjespan op middelmatig vuur en fruit de overige knoflook en sjalot 1 - 2 minuten. Voeg de spitskool, broccoli en de aangegeven hoeveelheid water toe en roerbak 8 - 10 minuten. Breng op smaak met peper en zout.

Salade maken

Voeg, wanneer de risotto klaar is, de helft van de pecorino toe aan de pan en roer goed door. Snijd de little gem in de lengte in partjes, verwijder de harde kern en leg in een serveerschaal. Meng in een kleine kom de basilicumcrème met extra vierge olijfolie naar smaak. Garneer de little gem met de basilicumcrèmedressing en het amandelschaafsel.

Snijd de varkenshaas met ontbijtspek in plakken en serveer met de champignonroomsaus. Serveer de risotto in een schaal en strooi de overige pecorino erover. Serveer met de gebakken spitskool, de broccoli en de littlegemsalade.
