- Boil plenty of salted water in a pot or saucepan.
- Cook the noodles for 3 - 4 minutes until al dente.
- Reserve 50ml cooking liquid per person, then drain and return to the pot.
- Heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat. Crush or mince the garlic.
- When the oil is nice and hot, fry the mince with the garlic for 2 minutes.
- Add the vegetable mix and stir-fry for 4 - 6 minutes. Season to taste with salt and pepper.
- In a bowl, combine the tahini with the ginger stir-fry sauce, the bulgogi sauce, the white wine vinegar, the reserved cooking liquid, some sambal as preferred and the soy sauce (see Tip).
- Transfer the sauce to the noodles and mix well to combine.
Health Tip: if you're watching your salt intake, use just half of the soy sauce.
- Finely chop the coriander.
- Serve the noodles in bowls. Top with the stir-fry.
- Garnish with the coriander and the sesame seeds.
