Préparer

Portez une grande quantité d'eau à ébullition dans la casserole pour les nouilles. Écrasez ou émincez l'ail. Râpez finement le gingembre. Émincez finement le piment rouge (voir conseil).

Tip: Houd je niet van pittig? Verwijder dan de zaadlijsten en voeg de helft van de rode peper toe.

Couper les légumes

Faites cuire les nouilles 3 à 4 minutes à couvert dans la casserole, puis égouttez. Coupez la partie blanche de l'oignon nouveau en morceaux de 2 cm. Coupez la partie verte de l'oignon nouveau en fines rondelles et réservez-en un peu pour la garniture. Émincez l'échalote en demi-rondelles très fines.

Frire l'échalote

Faites chauffer environ 3 cs d'huile de tournesol par personne dans la petite casserole. Veillez à ce que le fond soit entièrement recouvert d'huile et laissez bien chauffer. Séparez toutes les rondelles d'échalote les unes des autres. Ajoutez-les délicatement à l'huile et faites-les frire 4 à 5 minutes, ou jusqu'à ce qu'elles brunissent (voir conseil). Retirez-les de la casserole à l'écumoire et laissez-les s'égoutter sur une assiette recouverte d'essuie-tout. Salez et poivrez, puis réservez.

Tip: Houd de pan goed in de gaten en laat ze niet te donker kleuren. Indien een deel van de sjalot al klaar is, kun je deze alvast uit de pan scheppen.

Faites chauffer 1/2 cs d'huile de tournesol par personne à feu moyen-vif dans le wok ou la sauteuse et revenir l'ail, le gingembre et le piment rouge 1 minute. Ajoutez-y la carotte, le chou et l'oignon nouveau et faites cuire 3 à 4 minutes à feu moyen-vif. Remuez régulièrement. Salez et poivrez.

Tip: Wortel zit boordevol vitamine A - goed voor de groei, de gezondheid van je huid, haar en nagels en een goede werking van je ogen en afweersysteem.

Ajouter les nouilles

Ajoutez les émincés végétariens et la pâte épicée indonésienne au wok ou à la sauteuse et faites cuire 3 minutes. Ajoutez ensuite les nouilles cuites, la sauce vietnamienne et 1/2 cs de sauce soja Lucullus par personne. Faites chauffer encore 1 à 2 minutes à feu vif. Remuez régulièrement. Goûtez et rectifiez éventuellement l'assaisonnement avec du sel et du poivre.

Tip: Als de noedels zijn afgekoeld, kunnen ze soms wat plakken. Dit is niet erg, wanneer je ze verwarmt in de pan en mengt met de saus zal dit verdwijnen!
