Cooking Steps

Voorbereiden

Kook ruim water in een grote pan met deksel voor de aardappelen en de wortel. Schil de aardappelen of was ze grondig en snijd in grove stukken. Weeg de gele en de oranje wortel af en schil de wortel met een dunschiller. Snijd beide in grove stukken. Snijd de rode ui in halve ringen.

Kook de aardappelen met de wortel 15 – 18 minuten, afgedekt, in de pan met deksel. Leg in de laatste 5 minuten de varkensrookworst erbij. Giet daarna af en bewaar een beetje kookvocht. Stamp met een aardappelstamper de aardappelen en wortelen tot een grove stamppot. Bewaar de rookworst apart.

Ui karameliseren

Verhit ondertussen een hapjespan op middelhoog vuur en bak de rode ui, zonder boter of olie, met een snuf zout 2 – 3 minuten. Verlaag het vuur, voeg per persoon ½ el roomboter toe en bak nog 10 – 15 minuten op middelmatig vuur.

Bakken en aanmaken

Verhit ondertussen een koekenpan, zonder boter of olie, op middelhoog vuur en bak de spekblokjes in 5 - 6 minuten krokant. Breng in een kom de rucola op smaak met extra vierge olijfolie, peper en zout.

Op smaak brengen

Voeg de spekblokjes met bakvet, de overige roomboter en een klein scheutje melk toe aan de hutspot om het smeuïg te maken. Breng op smaak met peper en zout.

Serveren

Maak op elk bord een bedje van rucola, schep de hutspot erop en serveer met de rookworst. Schep de gekarameliseerde ui over de hutspot.
