Cooking Steps

Voorbereiden

Kook 1 liter water per persoon voor de asperges in een grote pan met deksel, of een aspergepan. Kook in een andere pan met deksel 400 ml water per persoon voor de aardappelen.

Snijden en schillen

Was of schil de aardappelen grondig en halveer ze. Snijd de grote aardappelen in kwarten. Snijd de onderste 2 cm van de asperges. Schil de asperges met een dunschiller vanaf de kop naar beneden. De kop hoeft niet geschild te worden.

Kook de aardappelen, afgedekt, 15 - 20 minuten in de pan met deksel. Giet daarna af en laat zonder deksel uitstomen.

Kook de asperges 12 - 15 minuten in de grote pan met deksel of in de aspergepan. Kook de eieren de eerste 8 minuten met de asperges mee. Haal de eieren daarna uit de pan en laat ze schrikken onder koud water.

Boter smelten

Schenk de hollandaisesaus in een steelpan en verwarm 4 - 6 minuten op laag vuur. Roer tussendoor goed over de bodem van de pan om aanbranden te voorkomen. Snijd ondertussen de krulpeterselie fijn. Smelt vlak voor het serveren de roomboter in een tweede steelpan op laag vuur en voeg de krulpeterselie toe. Breng op smaak met peper en zout. Pel de eieren en snijd doormidden. Haal de plakken ham van elkaar en rol ze op.

Verdeel de asperges en de aardappelen over de borden. Leg de hamrolletjes erbij. Schenk de gesmolten roomboter over de aardappelen en leg de halve eieren op de asperges. Garneer met de warme hollandaise saus.
