Cooking Steps

Prepare

  • Preheat the oven to 220°C.
  • Peel or thoroughly wash all of the potatoes and then cut into rough pieces.
  • Transfer to a pot or saucepan and submerge with water, then boil the potatoes for 12 - 15 minutes. Reserve a small amount of the cooking liquid, then drain and set aside. 
  • Meanwhile, dice the onion and bell pepper. Drain the corn.
Make the sauce

  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat. Fry the minced beef for 3 minutes over medium-high heat, separating it as you do.
  • Add the onion and bell pepper, then fry for another 2 - 3 minutes. Stir in the smoked paprika and the corn.
  • Add the tomato paste and fry for 1 - 2 minutes until crimson.
  • Prepare the stock and then use it to deglaze the pan.
Assemble

  • Mash the potatoes with a knob of butter and a splash of the cooking liquid as preferred.
  • Stir in the Mexican-style spices* and season to taste with salt and pepper. 
  • Transfer the filling to an oven dish and top with the mash.
  • Finish with the cheddar and then bake in the oven for 8 - 10 minutes until golden-brown.

*Take care, this ingredient is spicy! Use as preferred.

  • Serve the cottage pie on plates.
